Watermelon mint popsicles
Watermelon is one of the best parts of summer, am I right? Juicy, hydrating watermelon is so perfect on it’s own.
But the other night I bought a whole watermelon and found myself with no containers large enough to store it all. So I decided I better make some watermelon juice in the blender. And if you’re gonna make watermelon juice, why not make some popsicles too!
Although I was really determined to make popsicles, my molds were already in use. So, I used some cups I had leftover from our Girl Scout’s troop lemonade stand. I am linking them below because they are compostable and perfect for gatherings. And in this case, perfect for popsicle molds!
I knew I wanted to make them extra cute and watermelon-y. So I had to add the green layer. But what to add? Fresh mint of course! Mint and watermelon are the perfect, refreshing summer combo. And because I didn’t love the color I got when blending just fresh mint leaves from the garden, I added in some spinach to make the color dark, rich green. No one could taste it, or ever knew I hid spinach in their popsicle. Shhhh.
I have a really hard time getting enough greens into my diet, so I’m counting adding this spinach to a healthy frozen treat a major win.
These popsicles are so simple to make, have minimal ingredients, and are sure to hydrate and cool you down. Plus, I love how pretty they are! Their slightly pink hue makes my day.
Now I’m going to be completely honest with you, this is the second time I tried to make this recipe. As simple as it is, I made one major mistake. I tried to pour the green layer in too soon. When I went to check on my pretty popsicles, I found a completely brown-green popsicle. They were delicious and enjoyed in smoothies through the week. But, the secret to a good popsicle here is waiting for the pink layer to completely freeze before adding your green. Follow the simple steps and you’ll have pretty watermelon mint popsicles in no time!
