This vegan + paleo biscoff cookie iced latte is the perfect treat for a healthy caffeinated pick me up.
If you’ve ever been to Europe you might have experienced a coffee with a biscoff cookie alongside your cappuccino. Isn’t it lovely to get a little biscuit with your coffee? I am not sure why the rest of the world hasn’t adopted this policy yet, but we can all agree on one thing – biscoff cookies are the best. Depending on where you are in the world, you may be familiar with “speculoos” “Speculaas” or know the caramelized gingerbread flavor from “cookie butter” if you’re in the US. I know them all a little too well. 😉
I wanted to make a healthy afternoon drink and figured an iced latte would be a great way to use to use some of the speculoos spice that I’ve been slowly using since Christmas. Speculoos spice is a dreamy blend cinnamon, nutmeg, clove, aniseed, white pepper, coriander, and sometimes: ginger, cardamon, dried mandarin, and mace. I have this premade spice blend from Boston Spice Dutch Trade which was perfect!
Over the weekend I found some of these cookies in a local grocery store. I don’t see them often here in Tunisia. And I knew they would be a real treat for my family. In fact, my son know knows and recites the word “coooookie” thanks to them.
- One shot of espresso
- 1/2 cup of almond milk
- 6 dates (pitted)
- 1/2 vanilla bean (optional)
- 1/2 tablespoon speculoos spice
Place all ingredients into blender and blend on high over ice!
