Superfood antioxidant rich breakfast oatmeal cookies to go are a perfect when you need quick, delicious, antioxidant rich breakfast on a busy morning. They're filled with oats, amaranth, cranberries, chia seeds and coco nibs and are jam packed with antioxidants, minerals and fiber

I made these cookies for a hiking trip with our kids. I knew we would be out all morning and needing quick energy. I've made so many breakfast cookies in the past, but they are often moist and even sticky, so much so that they aren't suitable for taking along on the go. These were perfect as they we not sticky or crumbly. They are also full of delicious oatmeal cookie flavor with optional add ins.

How to make the best, chewy oatmeal cookies!

Baking these cookies is a breeze. All you'll do is:

Cream your butter, vanilla extract and brown sugar in a medium bowl, next add in eggs and mix well. Set aside.

Next you combine oats, superfoods and flour in a separate large bowl. Mix until well combined.

Then you add creamed butter, vanilla, sugar and egg mixture into your dry ingredients. Mix until well combined.

Drop rounded spoonfuls onto a lined cookie sheet and bake!

Superfood antioxidant rich breakfast oatmeal cookies to go are a perfect when you need quick, delicious, antioxidant rich breakfast or snack on a busy morning. They're filled with oats, amaranth, cranberries, chia seeds and coco nibs and are jam packed with antioxidants, minerals and fiber

Ingredients

  • 1 ½ cups rolled oats
  • 1 ½ cups all purpose flour
  • ⅔ cup salted butter
  • 1 tablespoon vanilla extract
  • ⅔ cup brown sugar
  • 2 large eggs
  • 1 teaspoon baking soda
  • 1 cup dried cranberries
  • ⅓ cup amaranth
  • ⅓ cup raw cocoa nibs
  • ¼ cup chia seeds

Instructions

  1. Preheat oven to 375 °F or 190 °C and line a baking sheet with a silicon baking matt or parchment paper.
  2. In a medium sized bowl, beat together your butter, vanilla extract and brown sugar until it's creamed and light and fluffy. Set aside.
  3. In a large bowl, combine your flour, oats, baking soda and superfoods.
  4. Pour your butter and sugar mixture into your dry ingredients and mix slowly until your dough is well combined.
  5. Drop dough in round mounds on your lined baking sheet. Flatten tops gently with the bottom of a spoon if desired.
  6. Bake for 10-15 minutes.
  7. Let cookies chill for 10 minutes and enjoy!

Notes

Cookies are good up to one week in an air tight container at room temperature.

Alternatively, you can store them in the refridgerator for up to three weeks.

Cookies freeze well. Remove from freezer and thaw in the refridgerator the day before you consume.
