


Pour coconut oil and nut butter into small sauce pan
Turn on stove to lowest heat setting
Melt coconut oil and nut butter over low heat, mixing constantly - too much heat will give nut butter a "burnt" taste
Once evenly mixed and smooth, remove from heat and pour into medium sized bowl
Add in coconut flour and coffee mix and combine until it forms a dough like consistency
You should be able to form balls. If it's too wet, add more coconut flour, one tablespoon at a time
Form small truffles
Place in freezer for one hour
Line a baking sheet with parchment paper
Over a double boiler, melt your chocolate chips, adding coconut or MTC oil to thin it out. (Or, place in microwave on low - removing every 30 seconds to stir and check, do not overheat chocolate)
Use a toothpick or dipping spoon to fully dip your truffle into your melted chocolate
Place your chocolate dipped truffles on the baking sheet
When you're done dipping chocolate, move the chocolate truffles to the fridge to allow the chocolate to solidify, depending on your fridge temperature this may take up to two hours. I like to let mine sit overnight.
Store in your fridge, enjoy chilled + consume within one week.
Or store in your freezer and thaw when desired.
