
Do you ever crave all of the fresh vibrant flavors of thai food? I do more often than I would like to admit. š If it were a healthier option, my family would be having thai take out at least once a week. Lively, rich, full of flavor pad thai is my ultimate comfort food. Surprising yet balanced is what is so amazing about thai flavors, and that combination is captured in this light, + healthy thai inspired wrap.
I was excited to find these Nuco organic coconut tumeric wraps. Not only was it a truly delicious, an easy to use, pliable wrap, but they only have 4 organic ingredients! These nuco wraps are perfect for anyone who follows a: vegan, gluten free, organic, paleo, raw, keto, or no salt added – diet | lifestyle. I already placed my second order.

This wrap is family friendly, as it has no added spice, which is not traiditional of thai flavors. However, the satay sauce and coconut flavor in the wrap absolutely make up for it. My entire family (1 year old son, 6 year old daughter, husband and myself) truly enjoyed this alongside a coconut curry soup. I pre-made the wraps several hours before eating them (2 hours) and they were holding up excellent, especially considering their minimal ingredient list.

Assemble each wrap individually by:
Lay wrap flat
Gernerously spread satay sauce over the wrap
Starting at one end of the wrap, place chicken, carrots, lettuce, and cabbage in even, individual lines. Leave approximately 3/4 of the wrap uncovered
Starting on the end with your toppings, slowly roll your wrap until all toppings are rolled into the wrap
Serve with additional peanut sauce to dip, lime wedge and top with parsely (optional)

If you are feeling ambitious, you can make your own satay sauce. The one we used in this recipe was store purchased. However, next time I make this recipe I plan to make my own almond butter based satay sauce! One of my favorite things to make is condiments, dips, and spreads, and I have a feeling creating a healthy peanut sauce will be no exception.
